I've been given lots of Aronia berries as a gift. My own, new shrubs don't set any fruit as yet, so I'm very pleased! I put the berries in the freezer for few days and today I've used some of them for an Aronia liqueur.
I found a recipe on the internet. The liqueur is said to be ruby red and the taste should be similar to that of Portwine:
Aronialikör
2 liter aroniabär
70 cl vodka
Sockerlag:
6 dl socker
1 dl vatten
Servera kallt.
Aronia liqueur
2 litres Aronia berries
0,7 litre vodka
Sugar syrup:
0,6 litre castor sugar
0,1 litre water
1 vanilla pod
Do like this: Put the berries and the vodka in a glassjar with a lid. Store it in a cool and light place for 3 weeks. Shake the jar a couple of times a week.
Put the ingredients for the syrup to the boil. Leave it to cool. Strain the berries and mix ths sugar syrup with the vodka. Bottle the liqueur and store it in a dark and cool place for a couple of months. Serve chilled.
This liqueur is supposed to taste great with a cup of coffee. Has anybody tried it before?
